Ingredients 1 tablespoon olive oil 1 large sweet onion; diced 1 clove garlic; minced 3 cups diced fresh pumpkin 1 bunch of kale, stems removed and leaves coarsely chopped 4 cups finely chopped tomatoes or sauce聽 (or聽 the least processed prepackaged tomatoes or sauce) 鈥� reserve 陆 cup for bottom of baking dish 2 tablespoons finely chopped fresh sage 1/4 teaspoon dried basil 1/4 teaspoon dried oregano Pinch of salt 1/8 teaspoon ground nutmeg 2 cups part-skim ricotta cheese 1 egg Pinch of cinnamon 2 tablespoons finely chopped fresh parsley 1 1/2 cups (6 ounces) grated Parmesan 2 cups shredded part-skim mozzarella cheese 鈥� reserve 1/2 cup Par cooked or no boil lasagna noodles 1 teaspoon oregano Preparation 1.
